Banana Pancakes

                         (Serves 2)

This is a great one for the kids and has been my saving grace for a fussy child who doesn’t like fruit or much else for that matter!! Make sure you blitz the oats really well, perfect in a Thermomix or magic bullet.

Ingredients:

1 cup oats

2 eggs

2 whites

pinch of salt

1 banana (or any fruit you like, I’ve used pureed pear, apple)

Pinch of cinnamon

Method:

Put all ingredients in a blender and process until smooth consistency. Heat a non-stick frying pan and grease with a little butter or coconut oil. Cook batter in batches making the pancakes the desired size(my girls and I like pikelet size), once bubbles form on the surface flip over and cook other side. Serve with your favourite topping. We like maple syrup but don’t go crazy.
